Frisco Beef Subs with Roasted Vegetable Relish

Ingredients
- 1 medium red, yellow or green bell pepper, cut into thin strips
- 1 medium onion, cut lengthwise into then wedges
- 1 Tbsp. olive oil
- 1 Tbsp. balsamic vinegar
- 1/2 tsp. dried rosemary leaves, crushed
- 1/4 tsp. pepper
- 1 1/2 lbs. beef tri-tip or sirloin roast
- 2 Tbsp. mayonnaise
- 1-2 cloves garlic, crushed
- salt and pepper, to taste
- 6 sourdough rolls (4-5 inches long), split
Instructions
Preheat oven to 450°F. Lightly spray 15x10-inch jelly roll pan with cooking spray. Place vegetables in pan. Combine oil, vinegar, rosemary and pepper; drizzle over vegetables, tossing to coat.
Roast in oven 15-17 minutes or until vegetables are tender, stirring occasionally.
Meanwhile, in a small bowl, combine mayonnaise and garlic.
Trim fat from beef. Place on grid over medium coals. Grill approximately 20-25 minutes, to desired doneness, 140°F for medium-rare. Let stand 10 minutes before carving into thin strips. Season with salt and pepper, if desired.
Spread mayonnaise mixture on bottom half of rolls. Arrange beef over mayonnaise; top with vegetable relish.
