Fruited Wild Rice with Pecans

Ingredients
- 1 Tbsp. butter or margarine
- 1/2 cup onion, chopped
- 1 package (6 oz.) original flavor long grain and wild rice mix
- 1 1/2 cups water
- 2/3 cup apple juice or cider
- 1 small red apple, chopped
- 1 small green apple, chopped
- 1/4 cup pecans, coarsely chopped and toasted
Instructions
In medium saucepan, heat butter over medium-high heat until melted. Add onion; cook and stir 2-3 minutes.
Stir in rice, seasoning packet, water and apple cider. Bring to a boil; reduce heat to medium-low. Cover tightly and simmer 20-25 minutes until rice is tender.
Stir in apples. Cover; continue cooking 5 minutes or until liquid is absorbed. Stir in pecans.
Suggestions
To toast pecans, spread in single layer on baking sheet. Bake in 325°F oven 8-10 minutes, or until lightly browned.
