Steak Salad with Poblano Pepper Vinaigrette

Ingredients

  • 1 boneless beef top sirloin steak, cut 1-inch thick (about 1 lb.)
  • 1 medium poblano pepper
  • 1/4 cup fresh cilantro leaves
  • 3 Tbsp. fresh lime juice
  • 1 green onion, cut into 2-inch pieces
  • 1/3 cup olive oil
  • salt and ground black pepper
  • 8 cups mixed greens
  • 1 medium red bell pepper, cut into thin strips
  • 1 cup jarred nopales (prickly pear cactus), rinsed, drained
  • 1 cup julienne-cut jicama
  • 2 Tbsp. Chef Harry's Steak Spice Rub

Instructions

Sprinkle Chef Harry's Steak Spice Rub evenly over steak.

Place poblano pepper on grid over medium, ash-covered coals. Grill 10 to 15 minutes or until skin is completely blackened, turning occasionally. Place in food-safe plastic bag; close bag. Let stand 15 minutes.

Meanwhile place steak on grid over medium, ash-covered coals. Grill, uncovered, 17 to 21 minutes for medium rare to medium doneness, turning occasionally. Keep warm.

Remove and discard skin, stem and seeds from poblano pepper. Place pepper, cilantro, lime juice and green onion in food processor or blender container. Cover; process until smooth. With motor running, slowly add oil through opening in cover, processing until well blended. Season with salt and black pepper, as desired.

Combine greens, bell pepper, nopales and jicama in large bowl; toss to combine. Carve steak into thin slices; season with salt, as desired. Arrange steak over salad. Serve with poblano pepper vinaigrette.

Suggestions

Cook's Tip: To prepare on gas grill, preheat grill according to manufacturer's directions for medium heat. Grill steak, covered, 13 to 16 minutes for medium rare to medium doneness, turning occasionally. Cook's Tip: For convenience, 1-1/2 tablespoons steak seasoning blend may be substituted for seasoning ingredients.
