Sweet Corn-Grilled Portobello Mushroom Hash

Ingredients

  • 2 Tbsp. vegetable oil
  • 1 small sweet potato, peeled, diced
  • 1 small Idaho potato, peeled, diced
  • 1 small poblano pepper, diced
  • 1 small red pepper, diced
  • 1/2 cup scallions, chopped
  • 2 ears fresh corn, removed from cob
  • 1/2 cup crispy apple smoked bacon, diced
  • 1 large portobello mushroom, grilled and diced

Instructions

Heat oil in large nonstick skillet over high heat. Add potatoes and brown.

Add peppers and scallions. Cook 2-3 minutes.

Fold in corn, bacon and grilled mushrooms.

Continue to cook until hash is hot and all vegetables are cooked.

Suggestions

Serve with Grilled Flat Iron Steak.
