Ingredients
- 2 lbs. flat iron steaks
- 2 Tbsp. olive oil
- 6 large leaves iceberg lettuce
Kickin' Slaw
- 1 cup Napa Cabbage, thinly chopped
- 1/2 cup carrots, julienned
- 1/4 cup red bell pepper, chopped
- 1/4 cup green onion, sliced
- 2 Tbsp. freshly squeezed lime juice
Chipotle Mayonnaise
- 2 cups mayonnaise
- 3 Chipotle peppers in Adobo sauce
- 1 Tbsp. lime juice
- 2 cloves garlic
- 1 large shallot
- salt and pepper, to taste
Instructions
For Kickin' Slaw: Combine all ingredients; refrigerate until ready to servie.
For Chipotle Mayonnaise: In bowl of food processor, combine peppers, lime, garlic and shallot and process until smooth. Combine with mayonnaise and season with salt and pepper. Refrigerate until ready to serve.
For Wraps: Drizzle steaks with olive oil. Using the Southwestern Rub, cover the surface of the steaks, rubbing into surface.
Place steaks on grid over medium ash-covered coals. Grill steaks 7-9 minutes for rare (140°F) to medium (160°F), turning once. Set aside.
To assemble: Place Kickin' Slaw mixture on a lettuce leaf, top with thinly sliced beef and 1 Tbsp. Chipotle Mayonnaise. Roll leaf around mixture. Serve hot.
