Fruited Onion Marmalade

Ingredients

  • 1 Tbsp. vegetable oil
  • 2 medium (approx. 8 oz total) yellow onions, sliced
  • 1 package (8 oz.) mixed dried fruits, coarsely chopped
  • 1 cup ready-to-serve beef broth
  • 1 Tbsp. packed light brown sugar
  • 1 1/2 tsp. cider vinegar
  • 1/4 tsp. ground ginger

Instructions

Heat oil in large skillet over medium-low heat until hot. Add onions and slowly cook 20 minutes or until soft, stirring occasionally. Stir in dried fruits, beef broth, brown sugar, vinegar and ginger. Cover tightly and simmer over very low heat 20 minutes or until fruit is soft, stirring occasionally.

To ensure results, cook slowly...the secret is in the simmer.
