Southwestern Beef Shortcakes Heat-and-Serve Meal Ideas

Ingredients

  • 1 package (about 1 1/2 lbs.) sliced, fully-cooked barbecue beef brisket
  • 1 can (11 oz.) Mexican-style corn, drained
  • 1 can (2-1/4 oz.) sliced ripe olives, drained
  • 6 large pre-baked biscuits (4-5 inch diameter), warmed
  • 1/2 cup shredded Cheddar or Colby cheese
  • 1/3 cup dairy sour cream

Instructions

Place barbecue beef in large saucepan; heat over medium heat 6-8 minutes or until hot, sitrring occasionally.

Split biscuits horizontally in half. Place biscuits, cut sides up, on platter; spoon beef mixture evenly over biscuits. Sprinkle with cheese; top with sour cream.

Suggestions

Fully-cooked brisket can be found in the meat case or frozen food section of the supermarket.
