Ingredients
- 1/2 cup olive oil
- 1/2 cup walnut oil
- 3 Tbsp. lime juice
- 1 Tbsp. raspberry vinegar
- 1/2 tsp. shallot, minced
- 1 tsp. sugar
- 1/4 tsp. pepper
- salt, to taste
- 6 cups mixed greens
- 2 mangos, diced into large pieces
- 6 oz. Pistachio nuts
- 1 red bell pepper, diced
- 1 yellow bell pepper, diced
- 2 avocados, sliced
- 6 oz. Parmesan cheese, shredded
- 1 1/2 lbs. sirloin
Instructions
Combine olive oil, walnut oil, lime juice, raspberry vinegar, sallot, sugar, salt and pepper in a small bowl. Blend well with whisk.
Over medium-high heat, grill sirloin to desired doneness, about 15 minutes to medium-rare. Remove and slice into thin strips.
Mix lettuce, mango, pistachio, bell peppers, avocado and cheese. Divide and place onto 6 plates.
Top with meat. Serve with dressing mix on the side.
