Ingredients
- 8 slices crusty Italian bread, cut in 1/2-inch thick slices
- 8 slices deli roast beef
- 4 slices mozzarella cheese
- 1 container (8-10 oz.) roasted peppers, drained, rinsed and chopped
- 2 Tbsp. green olives, with pimientos; diced
- extra-virgin olive oil, for brushing
Instructions
Make four sandwiches with bread, roast beef, cheese, and a sprinkling of diced roasted peppers and olives.
Heat a nonstick griddle or skillet over medium heat.
Brush sandwiches on both sides with olive oil. Grill sandwiches 2-3 minutes on each side.
Cut sandwiches in half and serve immediately.
Suggestions
For a "pressed" sandwich, wrap a brick completely in foil; or have an additional very heavy pan available. Place the foil-wrapped brick or heavy pan on the sandwich while grilling.
