Spicy Pineapple Fried Rice Side Dishes

Ingredients

  • 1 can (8 to 8-1/4 oz) crushed pineapple in syrup
  • 2 Tbsp. vegetable oil
  • 1 clove garlic, crushed
  • 1 tsp. finely chopped fresh ginger
  • 1/8-1/4 tsp. crushed red pepper
  • 3 cups cold cooked rice
  • 1/4 cup soy sauce
  • 1/4 cup thinly sliced green onions

Instructions

Drain pineapple, reserving 1/4 cup syrup for steak glaze; set aside.

Meanwhile in large nonstick skillet, heat oil over medium-low heat until hot. Add garlic, ginger and red pepper; cook and stir 2 minutes. Increase heat to medium-high. Add rice and soy sauce; cook 2 minutes, stirring frequently. Add reserved pineapple, tossing to combine; heat through. Sprinkle with green onions before serving.
