Twice Baked Potatoes Side Dishes

Ingredients
- 4 baking potatoes, washed and dried
- 4 Tbsp. butter
- 4-5 Tbsp. milk
- 1/4 tsp. salt
- dash pepper
- 2 Tbsp. chives, chopped (optional)
- 2 Tbsp. grated cheddar cheese (optional)
- 2 Tbsp. bacon bits (optional)
- 2 Tbsp. sour cream (optional)
Instructions
Pierce potatoes several times with fork and bake in 375°F oven for 1 to 1-1/2 hours (or 7-10 minutes in microwave oven).
To test for doneness, squeeze. If potato gives and feels soft, it is done.
With knife, cut off top 1/4 of potato and using a spoon remove pulp, placing pulp in bowl. To pulp add butter, milk and salt and pepper. Add any, or all, of the optional ingredients as desired. Mix well.
Refill potato shells with pulp mixture. If desired, place under broiler for 2-3 minutes to brown. Serve piping hot.
