Ingredients

  • 1 lb. beef chuck steak or roast, cut in 1/2-inch cubes
  • 2 cans black beans, drained and rinsed
  • 1 can double strength beef broth
  • 1 1/2 cups water
  • 1 cup salsa
  • 1 red bell pepper, coarsely chopped
  • 1/2 cup grated carrot
  • 1 Tbsp. fresh cilantro (optional)

Instructions

Brown beef cubes in 1 tsp. oil over medium-high heat in 2-quart pot.

Add beans, broth, water and salsa. Lower heat and simmer, covered, 45 minutes or until beef is tender. Add peppers and carrots and simmer 5 minutes longer.

Garnish with chopped cilantro if desired.
