Ingredients

  • 2 1/2 lbs. boneless beef chuck or round, cut into 1/2-inch pieces
  • 2 cans (15 1/2 oz. each) black beans, rinsed, drained
  • 1 can (15 1/2 oz.) chili-style tomato sauce with diced tomatoes
  • 1 medium onion, chopped
  • 2 tsp. chili powder
  • 1 tsp. salt
  • 1 tsp. ground cumin
  • 1/2 tsp. pepper
  • 1 cup prepared thick-and-chunky style salsa

Instructions

Combine all ingredients except salsa in Dutch oven; bring to a boil. Reduce heat; cover tightly and simmer 1 1/4 to 1 1/2 hours, or until beef is fork tender.

Just before serving, stir in salsa; heat thoroughly.

Suggestions

If chili-style tomato sauce with diced tomatoes is not available, substitute one can (14 1/2 oz.) chili-style diced tomatoes, plus 1 can (8 oz.) tomato sauce.
