Veal Chops with Bourbon-Apple Sauce & Pecan Wild Rice Special Entertaining

Ingredients

  • 4 veal ribs or loin chops, cut 1-inch thick (about 9 oz. each)
  • salt and pepper
  • 1 Tbsp. vegetable oil
  • 1/4 cup minced shallots
  • 1/2 cup bourbon or apple juice
  • 1-3/4 cups veal stock or 1 can (13-3/4 to 14-1/2 oz. ready-to-serve chicken broth)
  • 2 tsp. minced fresh thyme
  • 3 cups diced peeled Fuji or other red apples (about 2-1/2 medium)
  • 4 Tbsp. cold butter
  • 1/4 tsp. salt
  • 1/8 tsp. pepper

Pecan Wild Rice

  • 1 package (6 oz.) original recipe long grain and wild rice mix
  • 1 cup chopped toasted pecans

Instructions

Heat large nonstick skillet over medium heat until hot. Place veal chops in skillet; cook 14 to 16 minutes for medium doneness, turning occasionally. Remove chops; season with salt and pepper. Keep warm.

Meanwhile prepare rice mix according to package directions. Stir in pecans just before serving.

Heat oil in same skillet over medium heat until hot. Add shallots; cook and stir 1 minute or until tender. Increase heat to medium-high. Stir in bourbon; cook 1 to 2 minutes or until sauce is reduced to syrupy consistency. Stir in stock and thyme; cook 10 to 12 minutes or until sauce is slightly thickened and liquid is reduced by about half. Stir in apples; cook 3 to 5 minutes or until apples are tender.

Remove skillet from heat; whisk butter, 1 Tbsp. at a time, into sauce until blended. Season with 1/4 tsp. salt and 1/8 tsp. pepper. Spoon sauce over chops; serve with rice.

Suggestions

To toast pecans, spread in shallow baking pan. Bake at 350°F for 5 minutes, stirring occasionally, until toasted. Remove from pan. Let cool. To save time on preparing apples, purchase pre-sliced apples in the produce section or the salad bar of your grocery store.
