London Broil with Garlic Olive Steaks

Ingredients

  • 1 lb. flank steak, trimmed
  • 3 Tbsp. olive oil, divided
  • 1 tsp. seasoned salt
  • 2 Tbsp. butter
  • 3 cloves garlic, finely chopped
  • 1/4 cup pimento stuffed olives, chopped
  • 2 Tbsp. freshly squeezed lemon juice

Instructions

Combine 1 Tbsp. olive oil and seasoned salt and rub onto both sides of flank steak. Place in shallow dish, cover and place in refrigerator for approximately 1 hour.

Place steak on pre-heated broiler pan coated with non-stick spray. Broil approximately 4 inches from heat source on high for approximately 3 minutes on each side or until desired degree of doneness.

Sauté garlic and olives in 2 Tbsp. olive oil and butter for 1 minute, adding the lemon juice to deglaze. Simmer on low to keep mixture warm.

Thinly slice flank steak against the grain, saving any juices. Add juices to garlic mixture. Arrange beef over salad greens or mashed sweet potatoes. Drizzle with garlic mixture.
