Ingredients
- 6 boneless top loin (strip) or rib eye steaks, cut 3/4 inch thick
- 6 ears corn-on-the-cob in husks
Sassy Sauce
- 3/4 cup A1 Hickory Steak Marinade
- 3/4 cup salsa
- 1/3 cup packed brown sugar
- 2 Tbsp. sliced green onion
Instructions
Combine sassy sauce ingredients. Remove and reserve 1 cup. Place steaks and remaining sassy sauce in large sealable plastic bag; turn to coat. Close bag and marinate in refrigerator 30 minutes or up to 2 hours.
Pull back husks from corn leaving husks attached to base. Remove corn silk. Fold husks back around corn; tie with string. Soak corn in cold water 30 minutes or up to several hours before grilling.
Remove steaks from marinade; discard marinade. Remove corn from water. Place steaks and corn on grid over medium, ash-covered coals. Grill steaks, uncovered, 10 to 12 minutes (rib eye steaks 6 to 8 minutes) for medium rare to medium doneness, turning occasionally. Grill corn 20 to 30 minutes or until tender, turning occasionally. Season with salt as desired.
Heat reserved sassy sauce until warm; serve with steaks and corn.
Suggestions
Cooks Tip: Reserved 1 cup sassy sauce can be used to prepare Sassy Beans: Combine 2 cans (15 oz. each) pinto beans, drained and rinsed with 1 cup sassy sauce. Cook, covered, over medium heat until warm, about 8 minutes.
