Ingredients
- 1 lb. boneless sirloin steak, trimmed
- 1 tsp. vegetable oil
- 1 cup diced red bell pepper
- 1/2 cup bottled commercial salsa
- 1 can (15 oz.) pinto beans, rinsed and drained
- 4 flour tortillas
Rub
- 1 tsp. garlic salt
- 1 tsp. ground cumin
- 1 tsp. chili powder
- 1/4 tsp. ground red pepper
- 1/4 tsp. paprika
Instructions
Combine rub ingredients. Remove 1 tsp., set aside. Sprinkle remaining rub mixture evenly over steak.
Heat grill pan over medium-high heat. Lightly coat grill pan with cooking spray. Place steak on grill pan; cook 4 minutes on each side, or until desired degree of doneness. Remove from pan; let stand 5 minutes. Cut into thin slices.
While steak cooks, heat vegetable oil in medium saucepan over medium-high heat. Add bell pepper; saute 4 minutes or until tender. Add reserved rub mixture, 1/4 cup salsa and beans; cook 1 minute or until thoroughly heated, stirring constantly.
Serve steaks with beans, salsa, grilled onions, guacamole, anyo cheese and warm tortillas.
Suggestions
Substitute flank steak for great tasting fajitas.
