Rubbed Sirloin Steak with Chipotle Peanut Sauce Steaks

Ingredients

  • 1 beef top sirloin steak, cut 1-inch thick (about 2 lbs.)

Chipotle Peanut Sauce

  • 1 Tbsp. olive oil
  • 1 medium onion, chopped
  • 4 roma tomatoes, coarsely chopped
  • 2 Tbsp. creamy peanut butter
  • 2 chipotle peppers in adobo sauce, minced
  • 2 cloves garlic, minced
  • salt

Rub

  • 3/4 cup chopped onion
  • 1/4 cup packed light brown sugar
  • 2 Tbsp. cumin seeds
  • 2 Tbsp. whole black peppercorns
  • 4 cloves garlic, coarsely chopped
  • 1 tsp. salt

Instructions

To prepare Chipotle Peanut Sauce, heat oil in large nonstick skillet until hot.  Add onions; cook and stir 3 to 4 minutes or until transparent.  Add remaining ingredients and cook 12 to 14 minutes or until tomato pieces are tender and falling apart, stirring frequently.  Let cool slightly; place in food processor container.  Cover; process until pureed, stopping and scraping side of container as needed.  Return to skillet and heat thoroughly; season with salt, if desired.  Keep warm.

Meanwhile, combine onion, brown sugar, cumin seeds, peppercorns and garlic in food processor container.  Cover and process until smooth.  Spread mixture evenly onto steak.  Place steak on grid over medium, ash-covered coals.  Grill, covered, 15 to 18 minutes (over medium heat on preheated gas grill, covered, 11 to 15 minutes) for medium rare to medium doneness, turning occasionally.

Carve steak into slices.  Serve with Chipotle Peanut Sauce.
